Loaded Veggie and Beef Stuffed Bell Peppers

Ingredients

- ground beef

- bell pepper

- onion

- carrot

- potato

- cheddar cheese

- milk

- black pepper

- salt

- cumin

- garlic powder

- honey

Instructions

1. Preheat the oven to 375°F (190°C).

2. In a skillet, brown ground beef with chopped onion, carrot, and diced potato. Season with cumin, garlic powder, salt, and black pepper.

3. Cut the tops off the bell peppers and remove seeds. Fill each pepper with the beef mixture.

4. Top with cheddar cheese and drizzle a little honey over each stuffed pepper.

5. Place stuffed peppers in a baking dish with a splash of milk at the bottom and cover with foil.

6. Bake for 30 minutes, then uncover and bake for an additional 10 minutes until cheese is bubbly.
